Q and A with Coffee For Dummies author Major Cohen
What's your favorite coffee drink?
I love coffee so this question is easy. Give me a chance to taste a new crop, a new method of processing, or even a new drink creation, and I will jump at the chance! My day starts with straight up brewed coffee, made in my Chemex and sipped hot, black and with a slurp or two, even though I try hard not to wake up the rest of the house with my noisy drinking.
What's the best coffee to water ratio?
While there is no one single best ratio, as taste is so personal for each of us, there are guidelines that have been accepted as good starting points for over 80 years. The SCA (Specialty Coffee Association) maintains that the "Golden Cup" ratio provides an excellent starting point. I use it as a guide, making knowledge-based adjustments to variables when I brew to see how I can impact the end result and make the most of what my coffee has to offer.
What do you think attracts so many coffee drinkers to their local coffeehouse or coffee franchise?
This question brings to mind what local coffeehouses or franchises have to offer customers, and for me, the answer is grounded in personal human connection and knowledge that what I will purchase will be delicious because the barista has expertise coming from training and devotion to consistent execution of the craft. While I can replicate the coffee or beverage I am after at home, with the right tools and beans, there is no denying the uplifting experience I enjoy when my beverage is prepared by a skilled barista and accompanied with a smile.

How do I make a cold brew coffee?
Cold brew coffee is made by simply bringing coarsely ground coffee in contact with unheated water for a long time. It can take more than 12 hours and can be done in small or large quantities.
Starbucks makes five or more gallons at a time in their stores, but even a small jar left in your fridge will do the trick.
Grinding and Measuring:
- Grind your coffee to a coarse consistency, then get ready to measure it.
A ratio of 1 part coffee to 8 parts water will result in a drinkable finished liquid, but you also can try a smaller ratio of 1:4, and then dilute the finished liquid with a bit of water to create the final drink.
I prefer the 1:8 ratio and use 80 grams of coffee and 640 grams of water to make a good sized batch at home.
Chilling and Serving:
- Add the water to your ground coffee, cover the container, and place in refrigerator for 12 hours.
- Strain the coffee concentrate into a new, clean jar or pitcher, then pour over ice for a delicious...and cold...finished beverage.

How do I steam milk?
The trick is to understand that milk steaming is more than just heating up the dairy or non-dairy that is added to the coffee or espresso to make a drink. The consistency and taste actually change through steaming.
I always appreciate when a barista steams with practiced expertise, and I watch every time to see what I might learn.
Ask your barista about the process the next time you get a chance and I bet you will learn something new, plus you'll win points for taking an interest in the often overlooked barista profession and its skillset.
Prepping and Measuring:
- Measure milk carefully and only steam what you need. Be sure to leave room in your pitcher for expansion.
- Blow out the steam wand to clean, or purge, it.
- Insert the tip of wand in milk so it's just below the surface, about 1/4 inch. It's OK to tip the pitcher, but be sure to keep the wand submerged.
Steaming is about using pressure to create aeration and heat to raise temperature at the same time.
Steaming and Serving:
- Monitor temperature with thermometer. You want milk hot, not scalded. When milk is about 37C/99F, aeration is done. You'll be texturing and adding heat the rest of the process.
- Continue steaming until milk reaches 55-60C/130-140F. Stop, then remove and clean wand.
- Swirl pitcher and give it a tap or two until milk is smooth and shiny with no bubbles.
- Pour milk and coffee or espresso together.

About the author

Major Cohen is a coffee lover who has enjoyed a dream realized. A teacher of photography and film at the high school level for 20 years, he grew up in a time when coffee went from a poor quality, inexpensive commodity to a ubiquitous and often delicious inexpensive luxury.
His second career brought his passion for teaching and passion for coffee into alignment and he worked as a coffee educator for more than 25 years for Starbucks.
His work for Starbucks began in 1995 when, as a Barista, he leveraged his passion and curiosity for coffee and business and after 8 years in operations in 5 roles was invited to move to the Seattle headquarters and join the coffee team. In the next 17 years he had the opportunity to be part of some of Starbucks most innovative efforts, and during his final 7 years traveled extensively in Asia as a coffee educator and brand ambassador. Although recently retired from Starbucks, Major is continuing his involvement with education in his role as an Authorized Specialty Coffee Association trainer, AST, and has written his first book, Coffee for Dummies.

- Reviewed in the United States on March 16, 2021I bumped into Major a couple times at the SCA Coffee Expo in Seattle a couple of times in 2017 or 2018. It was funny because everyone seemed to know who he was. The pointed him out from across the room. People made excuses to go chat with him. He seemed to greet everyone with a degree of familiarity. Maybe he really remembered them, maybe he recognized we were all coffee professionals with more in common than different.
With as much experience as he has, it must have been a challenge for Major to decide what to include and what not to. Each section of this book is a tip-of-the-iceberg survey of his knowledge. I imagine he could have easily written a book 10 times longer. If you have any interest in sounding like an instant coffee professional this is the book for you. If you are aspiring to be more than a barista this is a great book to have on hand. If you're looking to inspire your café staff or inspire conversation this is the right book. If you want to give a gift along with that coffee maker to your relative who likes coffee (and you know little else about them) this is the right book. I'd highly recommend it to people who are looking for knowledge about the world of coffee.
As someone who already has plenty of coffee books, I found Major's appreciation for our moment in history to be comforting and inspiring. While there may be more extensive books dedicated to each topic, this telling is approachable (as are all the sections). Each big topic is full but not exhaustive, academic, or tedious. The approachable design and presentation is intentional. You will walk away feeling like you have a good grasp on all the basic ideas. For example, Part 4 is about the history of roasting and an overview of roasting. The whole section is 16 pages which is more than enough to help readers understand concepts of roasting. He doesn't shy away from using industry terms like "Maillard reaction" but doesn't provide enough information for me to start roasting. (I hope this helps you decide if the depth of information is right for you.)
Major's contribution to coffee education and culture over the course of his career is one to which we should all aspire. Buy the book and get ready for a thorough firsthand introduction to the world of coffee.
Reading this book made me feel like more of an insider than I really am and I liked that.

The best part of the book was the multiple citations for books and websites that you can check out for further study. I feel like those are the resources that will be more helpful and/or enjoyable than this book was.
Yes, you will learn (something) about coffee from this book, but for me it was such a tedious, frustrating and intellectually insulting read, pierced here and there with actual informative or enlightening tidbits. They really annoyingly baby you through each chapter. If you can read and comprehend the title of a chapter, then you don't need a patronizing explanation at the beginning of each chapter, telling you what you will learn in the following pages. It was garbage filler. "In the chapter titled 'Learning To Tie Your Shoes,' we're going to teach you how to actually tie your shoes!" It was that stupid and simple that I got fed up.
The author gives more information about coffee regions that he likes (East Africa, Central America) and much less about regions he doesn't like as much. I have been a big fan of Asian/Pacific coffee for years, and he glosses over it and moves on as if Sumatra was just a speed bump on the way to somewhere else he'd rather be.
The writing is also poor in areas. Grammar, syntax; it's like Major Cohen wrote the book without drinking any coffee first.
I can give it three stars though, because it was informative in places, and he does provide references to better resources than his own lazy mind. He didn't even explain how decaf or instant coffee is made.
I can't really recommend this book though. I'd rather start with an internet search with something like "coffee 101" or "coffee basics" in the search field. This book was poorly conceived and executed. Partial and wasted effort.

This is an outstanding book to know everything about coffee. Very interesting read as well. The storytelling ability of the author is a lot to learn from.
